Spicy Chicken With Couscous 🥘

Macros per serving: (Total 4 servings)
284 Calories | 50g protein | 22g carbs | 3g fat
Ingredients:
🔸 1 tbsp curry paste
🔸 1 tbsp mango chutney
🔸 1/2 tsp turmeric
🔸 1 serving salt (to taste)
🔸 50 ml olive oil
🔸 4 chicken breast
🔸 300 g couscous
🔸 350 ml vegetable stock
Optional extras:
🔸 Pomegranate seeds
🔸 Coriander
Directions:
Step 1: Make a marinade by mixing curry paste, chutney, turmeric, salt, and olive oil in a bowl.
Step 2: Cut each chicken breast in half, add to the marinade, and coat evenly.
Step 3: Set aside the chicken for at least 20 minutes (ideally overnight in the fridge).
Step 4: Grill chicken pieces for 5-6 minutes per side until golden and slightly charred.
Step 5: Pour boiling vegetable stock over couscous in a bowl, cover, and let it soak for 5 minutes
Step 6: Fluff couscous with a fork and add optional extras and pomegranate seeds.
Step 7: Divide couscous into 4 containers, top with chicken, and sprinkle with coriander
